Oatmeal Cream Cheese Pancakes

I made a small No-bake Lime Cheesecake this morning and was left with some of the cream cheese filling. As I have forgotten to give the Babies their snack box this morning, I felt obliged to prepare them an afternoon snack and so whipped up a few Oatmeal Cream Cheese Pancakes. Always trying to get rid of my leftovers as you can see.

We usually make crepes in this household, not pancakes. We like it thin, a little crispy on the edges but soft everywhere else. Filled with sugar or nutella. But I have been thinking a little of those smaller round and slightly thick pancakes where I may, since I do not have maple syrup, drizzle some of my favourite sweetened condensed milk over.

Oatmeal Cream Cheese Pancakes :

250g Self-raising flour
1 Tbsp Sugar
2 Tbsp Oats
1 small/medium Egg
250ml Milk
125g Cream cheese (mine has about 100ml of sweetened condensed milk and 25ml lime juice as well)
1/4 Tsp Vanilla extract
A pinch of Salt

Mix the flour, sugar, salt and oats. Make a well in the flour and add in the egg. Add in the vanilla extract. Mix with a whisk, adding in the milk bit by bit. Stir in the cream cheese (that normally should be softened beforehand at room temperature).

Set aside to rest for at least 30 minutes before starting to cook them in a small lightly-buttered crepe pan.

Some of the pancakes are burnt - because I am one of those unhealthy people who like their food a little burnt. And since they contain sugar, burnt = yummy. :-)

Sigh, I wish I didn't have leftovers the way I do. It's really very bad for my diet - if I could get round to starting it, of course.

S, we tried these this morning. It was yummy. I am going to make another batch and deep freeze it so that at least my kids have variety for their RUSH breakfast.

E, glad you liked the recipe. And envy you that you have freezer space...Lucky kids yours. Mine don't ever get breakfast as we're always late in the morning.
