Guinness Chocolate Cake

When you have decided to commit murder, you want to see the result of your crime. I would normally be squeamish about death, but when I want to inflict it, I am frustrated when I do not see the cadavres.

I can still hear those rats mocking me all of last night. And have not seen any dead rat after that 1st one yesterday. It is not a myth that rats are intelligent. They are difficult to kill.

Tomorrow the exterminator will come to control his work. I'm going to ask him if he knew what he was doing.

In the meantime, feeling dark dark dark, I'm on a Guinness Draught trip. It happens to me once in a while and today is one of those days. Baked a small Guinness Chocolate Cake this morning even before we had lunch.


Guinness Chocolate Cake :

80g Flour
1/2 Tsp Double action Baking Powder
60g unsweetened Cocoa powder
A good pinch of salt2 Tbsp Butter (cut into cubes)
80g Dark Chocolate
2 medium Eggs
100g Sugar
100ml Guinness Draught
40g Pecan nuts (roughly crushed)
2 Tbsp Quaker Oats

Pre-heat the oven to 190°C. Line a small baking pan with baking paper.

In a medium bowl, whisk together flour, baking powder, cocoa powder, and salt until evenly combined. Set aside.

Melt butter and chocolate in the microwave oven and stir until combined.

In a large mixing bowl, beat eggs and sugar until light and fluffy. Add the melted chocolate mixture, beating until combined. Stir in the pecan nuts.

Fold the flour mixture into the melted chocolate mixture. Whisk in the Guinness draught beer. Sprinkle oats over the batter if desired.

Pour into the baking pan. Bake for 20 minutes in the oven. Cool before cutting the cake.
