Grilled Chicken Chop


Grilled Chicken Chop with Pepper Sauce and Pan-fried Potatoes

The Teenager loves Chicken Chop. The ones you get in the usually horrible Western Food stalls in Singapore food courts. If you have dined in real "Western" restaurants, you would wonder about the education we are giving our children. But trust me, it wasn't for want of trying.

Having said that, he likes that kind of Chicken Chop and I have to respect his taste (buds). Since we haven't gone back to the island this year, I've decided to prepare my own version of the Grilled Chicken Chop drowned in gravy and accompanied by pan-fried Potatoes. For my boy.

Grilled Chicken Chop :

1 Kg Skinless boneless Chicken thighs
2 Tbsp Worcestershire sauce
2 Tbsp Oyster Sauce
1 Tsp Light Soy sauce
2 Tbsp Sugar
1 Tsp ground Black Pepper

Black Pepper Sauce :

3 Shallots (sliced)
20g Butter
20g Flour
210ml Hot Chicken stock
250ml Milk
2 Tbsp coarse Black Pepper
1 Tbsp whole mixed Peppercorns
1 Tbsp Brandy
100ml Red or White Wine
2 Tbsp Worchestershire sauce
1-2 Tsp Salt
A few sprigs of fresh Thyme

Marinate the chicken thighs with the sauces, sugar and pepper for a few hours.

Prepare the black pepper sauce by making a roux with the butter, shallots, flour and milk. Meaning fry the shallots in the butter, then add the flour making sure to cook it properly before pouring in the hot stock progressively, stirring all the time with a wooden spoon.

Stir in the milk, pepper, brandy, wine and worchestershire sauce. Add the marinade from the chicken and stir to mix well. Add the salt and thyme. It will take some simmering and stirring before the sauce would be cooked. Nothing tastes worse than uncooked flour in a sauce. Set aside when it's ready.

Grill the marinated chicken on both sides on an oiled hot grill (but do not keep turning it over - just once will do). Serve the chicken with the pepper sauce on top and mashed potatoes or fries. I prefer pan-fried Potatoes with fresh herbs and garlic.

I think the best part is that sauce, looks so creamy.
