Spicy Mee Goreng

Spicy Mee Goreng

KK taunted me with her Spicy Mee Goreng on FB and refused to invite me to try it. I have no choice but to satisfy my craving by making one of my own :-). I've not made Mee Goreng mamak-style for a very long time. In my youth, after one of our Home Economics lessons, I would employ myself to cooking the dish whenever I could, pounding my own chillies to make the chilli paste, until I got sick of it and archived it as been there done it and moved on.

If you have travelled in Indonesia, you would probably have eaten quite a bit of Mie and Nasi Goreng. Hub wouldn't eat anything that wasn't cooked on the spot in front of him, so that was what he ate most of the time when we were travelling through Sumatra and Bali. However Spicy Mee Goreng is what we would eat in Singapore - cooked by an Indian-Muslim guy/mamak running a mamak stall. I do not think that you can find this fried noodle dish in India though.

It is usually fresh yellow noodles cooked in a spicy chilli-tomato paste and garnished with fried tofu, tomato slices, bean sprouts, scrambled egg etc. Just the thought of its spicy greasy goodness and my mouth is watering.

I had to use spaghetti since I cannot find fresh Hokkien yellow noodles here and unfortunately it doesn't do justice to the dish.

Spicy Mee Goreng :

250g Thin Spaghetti (cooked to al dente)

1 large Potato (cubed and cooked)
3 Eggs
1 cup raw peeled Prawns
1 large ripe Tomato (sliced into wedges)
A generous handful of Bean sprouts

1 Onion (sliced)
2 Garlic cloves (minced)

80g Chilli paste (I used Prima Taste's Nonya chilli)

3 Tbsp Tomato ketchup
1 Tsp Dark Soy sauce
2 Tsp Ketchup Manis
2 dried Bird's eye chillies (crushed)
1 Tbsp Sugar
3 Tbsp Water

Juice of 1 Lime

Heat oil in a wok and fry the cooked potatoes. Remove and set aside.

Mix the sauce ingredients together in a bowl.

Fry the onions and garlic till fragrant. Add in the chilli paste.

Stir in the prawns, tomatoes and return the potatoes to the wok.

Add the cooked spaghetti and the sauce. Stir-fry to mix well till the noodles have absorbed the sauce.

Make a well in the noodles and add more oil in it. Crack the eggs in the well and scramble them. Add the bean sprouts and mix everything together.

Squeeze lime juice over the noodles and serve them hot.

If you have yellow noodles, stick to them!
