Buffalo Chicken Wings

Buffalo Chicken Wings

We lived a few months in Rochester, NY, a few years ago. It's next to Buffalo where it snows aplenty and which is home to the famous Buffalo Chicken Wings that you get in most American Diners in and out of America.

I had a sudden craving for them the other day, have not made them in a long time so why not?

You normally eat the wings with raw celery and carrot sticks and a blue cheese dip, but me I'm no fan of celery unless it's just there to give flavour to a dish, so I happily overlooked them.


Buffalo Wings Hot Sauce :

Butter
Onion
Red Peppers
Garlic
Ground Cayenne Pepper
Tomato Sauce
Tabasco Sauce
Honey
Sugar
Red Wine Vinegar
Ground Cumin
Lemon Juice
Salt and Pepper
Flour

Basically just wash and pat dry the chicken wings and marinate them with salt, pepper, ground paprika and ground cumin. Set aside.

Prepare the sauce. In a casserole, brown some onions, garlic, red peppers in some butter. Add in a good amount of the rest of the ingredients (except the flour) knowing that the sauce has to be very hot, acidic and sweet at the same time. Add in the flour (about 1-2 Tbsp) in the end to thicken the sauce.

Heat up alot of oil and prepare to deep fry the chicken wings. When they are done, drain them on some kitchen towels before putting them one by one into the sauce to be coated. Serve hot.

Meat Balls with Hot Sauce

Since I had leftover sauce and leftover minced meat and prawn filling (from my wantons), I made a tapas of Buffalo Meat Balls out of them. Me no waste nothing if I can help it.

  2. Ahem, I'm going to have to borrow this recipe very soon too. We love Buffalo Wings in Cookalot! Not only with blue cheese dressing but garlic sauce as well.
